Most dishes that can be happily topped with a sunny-side-up egg get immediate brownie points in my book. Add to that a breakfast-for-dinner kind of situation and a flavour-packed oil to drizzle over the eggs and you’ve got yourself the kind of dish I would make on any weeknight.
This is the dish I made using this month’s President Choice PC Black Label box. It arrived with 3 products for me to choose from: their PC Black Label White Truffle Oil, PC Black Label Nero Di Seppia Conchiglie Pasta (an Italian pasta infused with cuttlefish ink) and PC Black Label Smoked Paprika Spice.
The idea behind this campaign is to encourage home cooks to #PlayWithYourFood so I must admit that my first inclination was to develop a recipe using the jet-black pasta as it’s not a very common ingredient, but I couldn’t get the idea of a paprika-flavoured oil out of my head so here goes..!
Roasted Veg with Sunny-Side-Up Eggs and Paprika Oil
Serves 2
How it’s done:
• 2 cups peeled and chopped squash (butternut or honeynut)
• 3 yellow-fleshed potatoes, peeled and chopped
• 5 tsp olive oil
• 1/4 tsp each salt and pepper
• 1 red bell pepper, seeded and chopped
• 1/2 avocado, chopped
• 1/4 cup fresh cilantro, torn
• 2 eggs
Paprika Oil
• 2 tbsp olive oil
• 1 1/2 tsp PC Black Label Smoked Paprika Spice
• Pinch salt
In bowl, combine squash, potatoes, salt and pepper; set aside. In large nonstick skillet over medium high heat, heat all but 1 tsp of the oil. Cook, stirring occasionally, until vegetables are light golden, about 5 minutes. Stir in red pepper.
Arrange vegetables, in one even layer, on a greased baking sheet. Cook in 425°F oven, turning once, until vegetables are golden and potatoes and squash are tender, about 20 minutes. Top with avocado and cilantro.
In same nonstick skillet over medium heat, heat remaining 1 tsp of oil. Crack eggs into pan. Cook until whites are set and yolks are runny, about 3 minutes. Serve over vegetables.
Paprika Oil:
While eggs are cooking, in small skillet over medium low heat, heat oil, paprika, salt and pepper, stirring to combine. Cook until oil is fragrant, about 5 minutes. Drizzle over eggs and vegetables.
