Ask me any day of the week what I’d like to have for dinner and I’ll probably ask for seafood. Whether it’s steamed lobster drizzled with olive oil, lemon and salt, seared scallops on top of a velvety potato puree or clams tossed with al dente spaghetti and white wine, properly cooked seafood always makes the top of my list.
Snow Crab RollsMakes 4 rolls
1/3 cup homemade mayonnaise (follow my basic recipe here)
1/4 cup chopped fresh cilantro
Pinch each salt and pepper
2 cups cooked, chopped snow crab
4 hotdog buns, grilled
1 tbsp butter
Small handful of pea shoots
In a small bowl, combine the mayonnaise, cilantro, salt and pepper. Fold in the snow crab chunks.
In a small pan on medium high heat, melt the butter. Cut buns in half lengthwise almost all the way and place the pieces cut side-down in the pan, swirling to make sure the pieces absorb all the butter. Remove when lightly golden.
Fill buns with snow crab mixture and top with pea shoots. Serve with cornichons and lemon wedges. Enjoy!
